Middle-Earth Menu: “Glóin’s Roast Beef Toasties” by Astrid Tuttle Winegar

Glóin is most well known for being the father of Gimli, an illustrious member of the Fellowship. He also resided in Erebor, where he became quite wealthy. Later on, he participated in the Council of Elrond. In The Hobbit, he wears a white hood and plays no instrument. Perhaps he sat on the sidelines with the pale-green-hooded Bombur, who also was apparently not gifted in the musical instrument department.

18 slices rye or pumpernickel cocktail bread
½ cup mayonnaise
4 ounces Gorgonzola cheese, crumbled into small bits
½ teaspoon plus ½ teaspoon Savory Seasoning
1 tablespoon heavy cream
18 slices of shaved roast beef (from ½ pound)
One unpeeled seedless cucumber, scored, then cut into 18 diagonal slices, ¼” thick
2-3 large red radishes, cut into ⅛” slices
¼ cup white wine vinegar
2 teaspoons sugar
Some additional salt for sprinkling
2 tablespoons minced fresh parsley or dill or 1 teaspoon dry parsley or dill

Preheat oven to 400°. Place the bread slices on a large baking sheet and bake for 8 minutes. Leave on the sheet and set aside. In a medium bowl, whisk together the mayonnaise, cheese, ½ teaspoon Savory Seasoning, and cream. Spread equally onto the toasts, about 1½ teaspoons on each. Fold the beef in halves or quarters to fit on each toast. In a medium bowl, whisk together the vinegar, sugar, and ½ teaspoon Savory Seasoning. Place the cucumber in this to coat, then place a slice on each toast. Place the radish in the same mixture, then place 2 or 3 slices on top of each cucumber slice (discard the vinegar or chop up any remaining vegetables and toss together for a tiny salad). Lightly sprinkle all with salt. Sprinkle with the parsley or dill. Makes 18.

These are known as Roast Beef Toasties in my cookbook.
